Cajun-Style Dirty Rice (One-Pot Beef Dish)

This hearty one-pot Cajun-style dirty rice combines flavorful beef with a medley of vegetables, all infused with aromatic spices. Perfect for a satisfying midweek meal!​

Ingredients

  • 1 tbsp olive oil
  • 500g beef mince
  • 1 onion, peeled and chopped
  • 3 garlic cloves, peeled and crushed
  • 4 celery sticks, cut into small chunks
  • 3 green peppers, cut into small chunks
  • 4 tsp Seasonings In The Abyss Seafood spice mix
  • 200g long grain rice
  • 4 tbsp tomato puree
  • 800ml hot beef stock
  • 75g grated cheese​

To Serve:

  • 6 spring onions (optional), chopped​

Instructions

  1. Heat the olive oil in a large, deep frying pan over medium heat. Add the beef mince and cook for about 5 minutes until browned.
  2. Add the chopped onion, crushed garlic, celery, green peppers, and Cajun spice mix. Cook for an additional 5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Rinse the rice thoroughly in a sieve until the water runs clear. Add the rinsed rice to the pan along with the tomato puree and hot beef stock. Season with salt and pepper to taste. Stir well to combine.
  4. Cover the pan with a lid and cook for 15–20 minutes, stirring occasionally, until the rice has absorbed the stock and is tender.
  5. Preheat the grill to high. Fluff the rice with a fork and sprinkle the grated cheese over the top. Place the pan under the grill for 3–5 minutes until the cheese is melted and bubbly.
  6. Garnish with chopped spring onions, if desired, and serve hot.​
